Grand Tour of Italy
Course dates: 22 February 2016 - 25 February 2016
The English 'milordi', as they were called, progressed down from the Alps through the Italian Peninsular on their grand cultural tours taking in Venice, Bologna, Florence, Rome, Naples and Sicily. This course follows in their footsteps to discover and make food and drink they encountered along the way.
Italian Trattoria Classics

Anybody who loves being on holiday in Italy will have enjoyed some fabulous informal evenings eating good, honest, simple food and local wine around a table in a trattoria. This course will teach you how to bring the flavours of Italy home with you!
Flavours of Sicily
Course dates: 18 April 2016 - 20 April 2016
Long-legged Italy kicked poor Sicily into the middle of the Mediterranean Sea, so says the old school room rhyme. Given this important geographic position and fertile land, Sicily, known as the bread basket of the Mediterranean, has long been a meeting point and melting pot of cultures from both east and west. With culture comes food and the traditions of the Sicilian kitchen reflect the islands rich history.
The School of Artisan Food exists to teach all aspects of artisan food production. It offers a unique opportunity for people of all skill levels to expand their knowledge through a wide range of short courses, and a one-year Advanced Diploma.
Based in the heart of Sherwood Forest on the Welbeck Estate in North Nottinghamshire, the school is housed in the former fire stables, dating back to 1870. Newly refurbished training rooms are specially equipped for the teaching of breadmaking, cheesemaking, brewing, butchery, charcuterie and preserving. More recently business and entrepreneurship courses have been added to the short course schedule and new course subjects are in development.The environment is serene and inspiring, but very accessible.
The School has an outstanding reputation for the quality of training it provides with courses being taught by some of the most skilled and experienced artisan producers and practitioners in the UK, Europe and beyond.
We are especially keen to provide opportunities for the local community as well as to teach enthusiasts, existing and aspiring producers and complete newcomers.
The School is a registered charity and, as a not-for-profit institution, is committed to providing the widest possible access to its facilities. The school fundraises to support its general activities and for bursaries to assist Advanced Diploma students with course fees. Several hundred thousand pounds has been raised and awarded to students since the school opened in 2009.
